Make your own Chorizo and Salami - a deli board of delights. You will learn different curing techniques - the taste is dictated by the cure. After careful stirring and mixing the sausage filling you will learn the art of Salami stuffing using the in-house stuffing machine. Then there is a cold smoke, before you sit down to enjoy some of the produce you’ve just prepared for lunch. Your very own Charcuterie. How smart is that?

From farmers markets to Bray High Street. This Charcuterie is the real deal. In fact, it’s Charcuterie with a British twist. You’ll be curing British rare breed meat. Their Berkshire salami, Hogget Bresaola, Pancetta are all prize winners, and they produce small batches of deliciousness that make any picnic into a stellar feast. Spreadable Salami? Who’d have thought it?
These passionate artisans are based on the High Street in Bray (the perfect foody spot only an hour from London, a destination village in its own right) where you can eat in and sample the cured meat boards.
