This kohlrabi feast is created by Andrew Clarke, a man with a passion for tattoos, food and mental health issues who is also an award-winning chef specialising in live fire cooking. If you’re thinking house menus have become formulaic of late, this may be the time to celebrate the last few weeks in lockdown with a Tramshed Project vegan feast, delivered in a box to the house.

Kolhrabi Vegan Steak
This is a complex and hearty vegan dish which celebrates the versatility of the Kohlrabi, a German turnip. To create the steaks, we marinate and slow cook the Kohlrabi portions in a Japanese-inspired dashi (broth) of dark soy, mushroom and kelp, before dehydrating them to create a unique meaty texture.
The steaks are served with seasonal greens, bean puree and a light stew of foraged mushrooms and coco di paimpol beans. For an extra kick, top it off with the provided ancho chilli oil.

Heritage Carrots with Cauliflower Cream & Pistachio Dukkah
Add to your meal with this small plate of heritage carrots sourced from British and French farms, topped with our home-made cauliflower and oat milk cream and finished with our dukkah – made of pistachio, sesame, olive oil and mixed spices.
Served warm, the carrots arrive part-cooked meaning all you need to do is finish them off in the oven for 20 minutes. Alternatively, you can pan fry them with butter.

Pink Fir Potatoes
An extra portion of 4 large potatoes to add to your feast box if you want that extra carby goodness: Kent pink fir potatoes topped with our caper and shallot dressing creme fraîche or vegan oat milk-based crème fraîche (select below).

Pear and Jerusalem Artichoke Cake
This striking vegan cake, made using artichokes and served warm is topped with candied Jerusalem artichokes and poached pears, both of which are sourced from British and French farms.

ABOUT THE TRAMSHED PROJECT
The Tramshed Project itself is based in Shoreditch. Built in 1905 it was a power station for the overground tram network. As well as a delicious restaurant (frequented by the Indytute team) it is normally used as an open space for local freelancers and small businesses and works with local charities as a food donation hub. It is an area where communities flourish and share.
