Of course the star of the pastry show is the classic Beef Wellington. A tender fillet wrapped in flaky puff pastry and attributed to the Duke of Wellington, who also put his name to a certain rubber boot.
Why he decided to concoct this rich dish of deliciousness remains a bit of a mystery. Maybe it was to celebrate the trouncing of Napoleon after the battle of Waterloo, or maybe his chef just had a moment. Whichever. This is a perfect dish for special occasions, but one that can send a frisson of panic into even an experienced home cook.
